What you Need
- 1 Tbs kosher salt
- 3 fat garlic cloves, peeled
- 1 Tbs black mustard seeds
- 12 juniper berries*
- 3 Tbs brown sugar
- 2 tsp ground hot pepper your favorite to taste
- 3 Tbs cider vinegar
- 3 Tbs coarsely ground black peppercorns
- 3 Tbs peanut oil
and of course…
- 3 slabs baby back ribs (1.5 to 2 lbs. each), membrane removed
The rub is designed to be made with a stone mortar & pestle, however you can use a small food processor to mix the ingredients. First mush the garlic and the salt into a paste. Add the juniper berries and mustard seeds. Crush the seeds thoroughly then add the rest of the spices. Blend by mixing well.
Cooking your Baby Back Ribs Recipe
At least 1 hour before smoking work the rub onto both sides of the ribs. Wrap in plastic and refrigerate for at least one hour. Preheat the smoker to 225 degrees. Hickory and apple smoke is great, but go ahead and smoke with your favorite flavor. Place the slab bone side down and smoke, they usually take 3 to 4 hours. Half way through I rotate the rack. When the ribs pull apart easily they are ready to serve.
