Smoked Chicken Thighs Juicy and Tasty

We love smoked chicken thighs. Fresh herbs and spices combined with a light smoked flavor add up to great taste.

Start out with 8 fresh chicken thighs and enough apple wood chips for a few hours of smoking . You will also need:

 1 tsp

 granulated sugar

 1 tsp  oregano
 1 tsp  basil
 1tsp  thyme
 1tsp  onion powder
 2 tsp  salt
 ½ tsp

 black pepper

  1. Combine all spices and herbs in a medium bowl and mix well.

  2. Using all the herb mixture completely season all surfaces of the chicken.

  3. Allow the thighs to sit for at least two hours in the refrigerator before smoking.

  4. Preheat the smoker to 225 degrees then place the chicken in the smoker.

  5. Smoke for an hour and after one hour, turn and rearrange the thighs.

  6. After two hours check the temperature of the thighs, continue to smoke until the thighs reach 180 degrees. Four to five hours is common.

Serve with a caser salad and new potatoes in butter with parsley.
