What you Need
- Two slabs of pork spare ribs,
- A good dry rub
- A good basting sauce
- A wet finishing sauce
Memphis Ribs Dry Rub :

Memphis Ribs Basting Sauce:
|Amount1 quart1 pint1/2 small can1 cup1-1/4 cup1/2 stick1/2 bottle||Ingredient
vinegar water chili peppers prepared mustardbrown sugar butter root beer
Combine first four ingredients in a saucepan and mix well. Cook very slowly for an hour. Add sugar, butter, and root beer to mixture and slow boil for 30 minutes.
Memphis Ribs Wet Finishing Sauce :

Mix ingredients in a saucepan and simmer for an hour. Let sauce stand for 2 hours before serving on the side with barbecue.

Get Cooking that Memphis Smoked Pork Spare Ribs Recipe
Preheat you smoker to 225 degrees. Rub dry the rub mix on both sides of skinned ribs. Place meat on the grates, bone side down. Cook ribs 1-1/2 to 2 hours, without turning, before using basting sauce. Smoke for 3-1/2 to 4-1/2 hours, basting every 45 minutes to one hour. Serve with Wet Finishing sauce on the side, or baste with the sauce during the last 1/2 hour of cooking.
We like to let the ribs set a while in a “tin foil tent” for about 20 minutes before serving.
