Pitmasters that love the ECB modify the Brinkman ECB to suit their needs. Simple modifications include repositioning the legs, adding charcoal grates, drilling additional ventilation holes, and mounting accurate thermometers
The biggest problems with the ECB are airflow and the solid charcoal pan that’s difficult to refill or empty. These are pretty easy to fix with simple modifications. Even those that are not very handy can make the mods.
More elaborate mods include mounting multiple thermometers and adding a second tier, making it a dual cook chamber model.
